Chicken:
- 2 (8-oz.) boneless, skinless chicken breasts
- Kosher salt
- Freshly ground black pepper
Breading:
- 1/3 cup all-purpose flour
- 2 large eggs
- 1 cup panko bread crumbs
- 1/4 cup finely grated Parmesan
- 1 tsp. dried oregano
- 1/2 tsp. crushed red pepper flakes
- 1/2 tsp. garlic powder
Additional:
- 1 cup store-bought or homemade marinara
- 1 cup shredded mozzarella
- Chopped fresh parsley, for serving
Instructions
- Cut and Season Chicken: Butterfly the chicken breasts, season with salt and pepper.
- Prepare Breading Stations: Set up three shallow bowls with flour, beaten eggs, and panko mixture.
- Coat Chicken: Coat chicken in flour, then egg, and finally the panko mixture.
- Air Fry Chicken: Cook coated chicken in the air fryer until cooked through. Top with marinara and mozzarella, then cook until cheese is melted.
