Description

This Andouille Sausage Tortellini Skillet is a quick and flavorful one-pan meal that’s perfect for a weeknight dinner. Spicy andouille sausage, tender cheese tortellini, and a creamy tomato sauce come together for a satisfying and easy dish.


Ingredients

  • 1 tablespoon olive oil
  • 12 ounces andouille sausage, sliced
  • 1 small onion, diced
  • 14.5 ounces canned petite diced tomatoes
  • 8 ounces chicken broth
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 10 ounces refrigerated cheese tortellini
  • 1/2 cup heavy cream
  • 1/2 cup sharp cheddar cheese, shredded

Instructions

  1. Sauté Sausage and Onion: Heat olive oil in a skillet over medium heat. Add andouille sausage and onion and cook until sausage is browned, about 5 minutes.
  2. Add Tomatoes and Broth: Add diced tomatoes, chicken broth, garlic powder, salt, pepper, and tortellini. Stir to combine.
  3. Simmer: Bring to a simmer, cover, and reduce heat to medium-low. Cook until tortellini is al dente (follow package directions). If excess liquid remains, drain all but ¼ cup.
  4. Add Cream: Remove lid and add heavy cream. Stir and cook until warmed through, about 1 minute.
  5. Add Cheese and Rest: Remove from heat. Add cheddar cheese, stir, and let stand for 5 minutes to thicken.

Notes

  • Garnish with scallions or chives.
  • Substitute refrigerated tortellini with frozen or dried (adjust cooking time and liquid as needed).
  • Substitute andouille sausage with chorizo or Italian sausage.
  • If the sauce is too thin, let it stand for 5 minutes to thicken.
