- 3 cups (395 grams) all-purpose flour (or bread flour)
- 1/2 tablespoon kosher salt
- 1/4 ounce instant or active dry yeast packet (or 2 1/4 teaspoons)
- 1 1/2 cups warm water (105°F)
Instructions
- Make Dough: In a large bowl, combine flour, salt, and yeast. Pour warm water over the mixture and mix until well combined. Cover with a towel or plastic wrap and let rise for 2-10 hours, or overnight.
- Shape Dough: Gently shape the dough into a boule or loaves. Place on parchment paper, dust with flour, and score the top. Let rest for 20-30 minutes.
- Bake: Preheat oven to 450°F with a baking stone or Dutch oven inside. Slide the dough onto the hot stone. Add 1 cup of hot water or 5 ice cubes to the oven for steam. Bake for 25-30 minutes, or until browned.
- Cool and Serve: Let cool on a cooling rack for at least 30 minutes before slicing and serving.
Notes
- If the dough is too sticky, add a little more flour and refrigerate for 30 minutes before shaping.
- The longer the dough rises, the chewier the bread will be.
- For smaller loaves, split the dough in half.
- Store in a paper bag at room temperature for up to 3 days or freeze for up to 3 months.
