Main Ingredients:
- 1 pound ground chicken
- 1 Tablespoon peanut oil
- 1/2 onion (finely diced)
- 1/2 Tablespoon minced garlic
- 1 cup red or green pepper (finely diced)
- 8 ounces water chestnuts (drained & finely diced)
For the Sauce:
- 3 Tablespoons soy sauce*
- 3 Tablespoons hoisin sauce**
- 1 Tablespoon sesame oil
- 1 Tablespoon rice vinegar
- 1 Tablespoon peanut butter
- 1 Tablespoon honey
- 2 teaspoons sweet chili sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon powdered ginger
To Serve:
- 1/4 cup peanuts (crushed)
- 1/4 cup sliced green onions
- Lettuce or your favorite Asian salad
Instructions
- Prepare the Sauce: Whisk together sauce ingredients until well combined. Microwave if needed to melt and mix well.
- Cook the Chicken: Heat peanut oil in a pan, add chicken, onion, and garlic. Cook until browned.
- Add Veggies: Add peppers and water chestnuts, cook until slightly soft.
- Simmer with Sauce: Add the sauce, simmer until everything is coated and heated through.
- Serve: Fill lettuce leaves with the mixture, top with peanuts, green onions, and enjoy!
Notes
- Ground chicken can be replaced with finely diced chicken breasts.
- Substitute peanut oil with olive oil or avocado oil if needed.
- For a soy allergy, use coconut aminos instead of soy sauce.
- Choose gluten-free soy sauce and hoisin sauce for a gluten-free option.
