Description

These Asian Chicken Lettuce Wraps are a delicious and healthier alternative to P.F. Chang’s version. Packed with flavor and easy to make, they are perfect for a quick weeknight dinner.


Ingredients

Main Ingredients:

  • 1 pound ground chicken
  • 1 Tablespoon peanut oil
  • 1/2 onion (finely diced)
  • 1/2 Tablespoon minced garlic
  • 1 cup red or green pepper (finely diced)
  • 8 ounces water chestnuts (drained & finely diced)

For the Sauce:

  • 3 Tablespoons soy sauce*
  • 3 Tablespoons hoisin sauce**
  • 1 Tablespoon sesame oil
  • 1 Tablespoon rice vinegar
  • 1 Tablespoon peanut butter
  • 1 Tablespoon honey
  • 2 teaspoons sweet chili sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon powdered ginger

To Serve:

  • 1/4 cup peanuts (crushed)
  • 1/4 cup sliced green onions
  • Lettuce or your favorite Asian salad

Instructions

  1. Prepare the Sauce: Whisk together sauce ingredients until well combined. Microwave if needed to melt and mix well.
  2. Cook the Chicken: Heat peanut oil in a pan, add chicken, onion, and garlic. Cook until browned.
  3. Add Veggies: Add peppers and water chestnuts, cook until slightly soft.
  4. Simmer with Sauce: Add the sauce, simmer until everything is coated and heated through.
  5. Serve: Fill lettuce leaves with the mixture, top with peanuts, green onions, and enjoy!

Notes

  • Ground chicken can be replaced with finely diced chicken breasts.
  • Substitute peanut oil with olive oil or avocado oil if needed.
