- 1 lb shrimp, peeled and deveined

- 2 avocados, cubed
- 2 Persian cucumbers, chopped
- 1/2 cup tomatoes, chopped
- 1-2 jalapeños, seeded if desired, and chopped
- 1 small shallot, finely chopped
- 1 clove garlic, grated
- 1/2 cup cilantro, roughly chopped
Seasoning & Other Ingredients
- 1 tbsp lime zest
- 1/4 cup lime juice
- 1/3 cup salsa verde
- Flaky sea salt, to taste
Instructions
- Cook the Shrimp: Bring a large pot of water to a boil over high heat. Add the peeled and deveined shrimp and simmer until they turn pink, about 2-3 minutes depending on their size. Drain the shrimp and immediately run them under cold water to halt the cooking process.
- Prepare the Shrimp: Once the shrimp are cooled, chop them into bite-sized pieces for easy mixing and eating.
- Combine Ingredients: In a large bowl, add the chopped shrimp along with cubed avocados, chopped Persian cucumbers, tomatoes, jalapeños, finely chopped shallot, grated garlic, and roughly chopped cilantro.
- Add Flavor: Stir in the lime zest, lime juice, and salsa verde. Season the mixture with flaky sea salt to taste, and gently toss to combine all ingredients well without mashing the avocados.

Notes
- For less heat, reduce the jalapeños or remove seeds completely.
