Units Scale

For the Potatoes:

  • 34 russet potatoes
  • 2 tablespoons olive oil
  • 2 1/2 teaspoons kosher salt, divided
  • 2 1/2 teaspoons granulated sugar, divided
  • 1 1/2 teaspoons cinnamon, divided
  • 1/2 teaspoon nutmeg, divided

For the Dressing:

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 1/4 cup milk
  • 1/2 cup crumbled blue cheese

Instructions

  1. Prep Potatoes: Preheat oven to 450°F. Scrub and dry potatoes. Cut into ¼-inch thick strips.
  2. Make Topping: Combine 1 teaspoon salt, 1 teaspoon sugar, 1 teaspoon cinnamon, and ¼ teaspoon nutmeg in a bowl.
  3. Season Potatoes: Toss potatoes with olive oil and remaining salt, sugar, cinnamon, and nutmeg.
  4. Bake: Spread potatoes in a single layer on a baking sheet. Bake for 45 minutes, turning every 15 minutes.
  5. Make Dressing: While potatoes bake, combine all dressing ingredients in a saucepan. Simmer over low heat until smooth and warm.
  6. Serve: Sprinkle potatoes with reserved cinnamon mixture and serve with warm blue cheese dressing.

Notes

  • Substitute blue cheese dressing with ranch, tzatziki, or chimichurri sauce.
  • Turn potatoes every 15 minutes for even browning and crispiness.
  • Keep dressing warm until ready to serve.
  • Use whole milk or buttermilk for the dressing.
