For the Potatoes:
- 3–4 russet potatoes
- 2 tablespoons olive oil
- 2 1/2 teaspoons kosher salt, divided
- 2 1/2 teaspoons granulated sugar, divided
- 1 1/2 teaspoons cinnamon, divided
- 1/2 teaspoon nutmeg, divided
For the Dressing:
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 teaspoon black pepper
- 1/2 teaspoon kosher salt
- 1/4 cup milk
- 1/2 cup crumbled blue cheese
Instructions
- Prep Potatoes: Preheat oven to 450°F. Scrub and dry potatoes. Cut into ¼-inch thick strips.
- Make Topping: Combine 1 teaspoon salt, 1 teaspoon sugar, 1 teaspoon cinnamon, and ¼ teaspoon nutmeg in a bowl.
- Season Potatoes: Toss potatoes with olive oil and remaining salt, sugar, cinnamon, and nutmeg.
- Bake: Spread potatoes in a single layer on a baking sheet. Bake for 45 minutes, turning every 15 minutes.
- Make Dressing: While potatoes bake, combine all dressing ingredients in a saucepan. Simmer over low heat until smooth and warm.
- Serve: Sprinkle potatoes with reserved cinnamon mixture and serve with warm blue cheese dressing.
Notes
- Substitute blue cheese dressing with ranch, tzatziki, or chimichurri sauce.
- Turn potatoes every 15 minutes for even browning and crispiness.
- Keep dressing warm until ready to serve.
