Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat the oven to 350 degrees Fahrenheit. Lightly brush a baking sheet with canola oil to prevent sticking, and have a second baking sheet ready if needed.
- Make Filling: In a mixing bowl, combine the diced rotisserie chicken, coleslaw mix, and chopped peanuts. Set this mixture aside while you prepare the sauce.
- Prepare Sauce: In a separate bowl, whisk together creamy peanut butter, seasoned rice vinegar, soy sauce, and a pinch of crushed red pepper until smooth and well combined. Add 3 tablespoons of this sauce to the chicken mixture and stir thoroughly to coat the filling evenly. Reserve the remaining sauce for dipping.
- Assemble Wontons: Place a wonton wrapper on a clean surface. Spoon an even amount of the filling into the center of each wrapper. Moisten the edges of the wrapper with water to help seal it, fold diagonally to form a triangle, and press the edges firmly to seal completely. Place the filled wontons on the prepared baking sheet.
