Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Spray a 2-quart (or 9×9-inch) baking dish with nonstick cooking spray to prevent sticking and ensure easy cleanup.
  2. Prepare the Streusel Topping: In a bowl, use a fork to mix together the brown sugar, self-rising flour, and softened butter until the mixture becomes crumbly. Stir in the uncooked old-fashioned oats and chopped pecans until evenly combined. Set the streusel aside.
  3. Make the Filling: In a medium bowl, whisk together the self-rising flour, sugar, and milk just until blended; do not overmix. Whisk in the melted butter (and banana extract if using) until fully incorporated. Pour this mixture into the prepared baking dish, spreading evenly.
  4. Layer the Bananas: Arrange the sliced bananas evenly on top of the filling mixture for a uniform layer.
  5. Add Streusel Topping: Sprinkle or crumble the prepared oat-pecan streusel evenly over the banana layer, ensuring full coverage for a crispy, sweet topping.
  6. Bake: Place the baking dish in the preheated oven and bake for about 45–50 minutes, or until the top is golden brown and the cobbler is set and no longer jiggly in the center.
