- 1/2 cup salted butter
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream (or plain Greek yogurt)
- 1 1/2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 3/4 teaspoon fine sea salt
- 2 cups mashed very ripe bananas
- 3/4 cup chopped walnuts
Instructions
- Prep: Preheat oven to 325°F. Grease and flour two 8×4-inch loaf pans (or one 9×5-inch loaf pan).
- Cream Wet Ingredients: Cream butter and sugar with an electric mixer. Mix in eggs, sour cream, and vanilla extract.
- Add Dry Ingredients: Add flour, baking soda, and salt. Stir until just combined. Fold in mashed bananas and walnuts.
- Bake: Pour batter into prepared pan(s). Bake for 55 minutes (or longer, depending on pan size), or until golden brown and a toothpick inserted into the center comes out clean.
- Cool: Let cool in the pan before transferring to a cooling rack to cool completely.
Notes
- To make muffins: Bake batter in muffin tins for 20-25 minutes.
- To make small loaves: Bake batter in 4 small loaf pans for 35-45 minutes.
- Store leftovers in an airtight container for up to 5 days.
