For Biscuits:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 2 teaspoons sugar
- 1 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup buttermilk
For Sausage Gravy:
- 1 pound pork breakfast sausage
- 1/3 cup all-purpose flour
- 3–4 cups whole milk
- Salt & pepper to taste
Instructions
- Prepare Oven and Biscuits: Preheat oven to 450°F. Combine flour, baking powder, baking soda, sugar, and salt in a bowl. Cut in butter until mixture resembles coarse crumbs. Stir in buttermilk until just combined.
- Shape and Bake Biscuits: Turn dough onto a floured surface and knead gently. Pat into a 1-inch thick rectangle and cut out biscuits. Place on a baking sheet, brush with milk, and bake for 12-15 minutes, or until golden brown.
- Make Gravy: While biscuits bake, brown sausage in a skillet. Sprinkle with flour and cook for 1 minute. Gradually add milk while stirring constantly. Cook for 10 minutes, or until thickened, adding more milk if needed. Season with salt and pepper.
- Serve: Split biscuits in half and ladle sausage gravy over the top.
Notes
- Substitute buttermilk with ¾ cup milk mixed with 1 teaspoon of vinegar or lemon juice.
- Use very cold or frozen butter for flakier biscuits.
