Description

This Croissant French Toast Casserole is a decadent and comforting baked breakfast dish that combines buttery croissants, a rich custard mixture, and fresh berries. Perfect for holiday mornings, brunches, or special gatherings, this recipe can be assembled the night before and baked fresh, delivering a golden, custardy center with crisp edges and bursts of juicy fruit.

Ingredients

Scale

Croissant Base

  • 5-6 large croissants (fresh or a few days old)

Custard Mixture

  • 5 eggs
  • 1 cup whole milk (warm)
  • 1/2 cup heavy cream
  • 4 tbsp melted butter
  • 1/3 cup sugar
  • 2 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1/2 tsp fine sea salt

Berries

  • 2 cups blueberries or mixed berries
  • Additional berries for garnish (strawberries, blueberries, blackberries, raspberries)

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350°F (175°C). Butter a 9″x13″ casserole baking dish thoroughly to prevent sticking.
  2. Prepare croissants: Cut the croissants into small cubes roughly 1 to 1.5 inches in size. Spread the pieces evenly in the prepared casserole dish.
  3. Make the custard: In a mixing bowl, whisk together the eggs, warm whole milk, heavy cream, melted butter, sugar, vanilla extract, ground cinnamon, and sea salt until smooth and well combined.
  4. Assemble the casserole: Pour the custard mixture evenly over the croissant pieces in the dish. Gently press the croissants down with a spatula to help them absorb the custard. Distribute the 2 cups of blueberries or mixed berries on top and gently push some berries between the croissant layers. Let this soak for at least 15 minutes, or refrigerate and let it soak overnight for best results.
  5. Bake: Place the casserole in the preheated oven and bake for 45 minutes until the mixture is set in the center and the top is golden brown.
  6. Serve: Remove from the oven and garnish with additional fresh berries. Serve warm, optionally with maple syrup for an indulgent touch.

Notes

  • This casserole is perfect for prepping the night before to save time on busy mornings.
  • Using slightly stale croissants helps absorb the custard better, enhancing texture.
  • Feel free to substitute or add other fresh berries depending on seasonality and preference.
  • Serve with maple syrup or a dusting of powdered sugar for extra sweetness.
  • This dish works wonderfully for baby showers, holiday breakfasts, or brunch potlucks.
