Description

Buffalo Blitz Bites are a delicious and savory appetizer featuring a spicy chicken and cheese filling baked inside flaky puff pastry cups. These bites combine the tang of buffalo hot sauce, the creaminess of cheeses, and the crunch of a fresh carrot and celery slaw, perfect for entertaining or game day snacks.

Ingredients

Scale

Vegetable Slaw

  • 1 large carrot, peeled, grated (optional)
  • 1 large stalk celery, thinly sliced
  • 2 Tbsp. apple cider vinegar
  • Kosher salt, to taste

Filling

  • 6 oz. cream cheese, softened
  • 6 Tbsp. unsalted butter, melted
  • 1/3 cup hot sauce
  • 1 1/2 tsp. store-bought or homemade Cajun seasoning
  • 2 1/4 cups chopped rotisserie chicken (about 12 oz.)
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup blue cheese crumbles, plus more for serving
  • 4 Tbsp. sliced chives, divided

Dough and Garnish

  • All-purpose flour, for surface
  • 1 (8 1/2-oz.) sheet puff pastry
  • Cooking spray
  • Ranch dressing, for serving

Instructions

  1. Prepare the Vegetable Slaw: Preheat the oven to 450°F (232°C). In a small bowl, toss together the grated carrot, thinly sliced celery, apple cider vinegar, and a pinch of kosher salt. Set this mixture aside to allow the flavors to meld while you prepare the bites.
  2. Mix the Filling: In a large bowl, combine the softened cream cheese, melted butter, hot sauce, and Cajun seasoning, stirring until the mixture is smooth and fully blended. Gently fold in the chopped rotisserie chicken, shredded cheddar cheese, blue cheese crumbles, and 3 tablespoons of the sliced chives until evenly distributed throughout the mixture.
  3. Prepare the Puff Pastry: Lightly flour a clean surface and roll out the puff pastry sheet into a 12 by 10-inch rectangle. Using a bench scraper or sharp knife, cut the dough into 12 equal squares, preparing them for the muffin tin.
  4. Assemble the Bites: Spray a standard 12-cup muffin tin with cooking spray to prevent sticking. Place each puff pastry square into the individual muffin cups, pressing gently to fit them into the bottom and sides. Fill each pastry cup with the prepared chicken and cheese mixture, dividing it evenly among the 12 cups.
  5. Bake: Place the muffin tin in the preheated oven and bake the bites for 17 to 20 minutes, or until the puff pastry is golden brown and the filling is bubbling and cooked through. After baking, allow the bites to cool in the tin for 5 to 10 minutes to set.
  6. Serve: Carefully transfer the baked bites to a serving platter. Top each bite with the reserved carrot and celery slaw and sprinkle with the remaining 1 tablespoon of sliced chives. Serve these delicious Buffalo Blitz Bites warm with ranch dressing on the side for dipping.

Notes

  • The carrot can be grated or finely chopped depending on your preference for texture.
  • Use freshly shredded cheddar cheese for best melting quality.
  • You can adjust the amount of hot sauce to control the heat level.
  • Leftover bites can be stored in the refrigerator and reheated in the oven for a few minutes to maintain crispiness.
  • Substitute blue cheese crumbles with goat cheese if preferred.
