Description

This Buffalo Chicken Lasagna is a unique and flavorful twist on traditional lasagna, blending the spicy kick of buffalo sauce with creamy béchamel and gooey layers of cheese. Perfect for gatherings or a hearty family dinner, this dish combines tender ground chicken, melty mozzarella, blue cheese crumbles, and lasagna noodles for an indulgent comfort food experience.

Meat Sauce

  • 2 tablespoons extra virgin olive oil
  • 2 pounds ground chicken
  • 1 medium white onion, diced
  • 3 celery ribs, sliced
  • 1 (15-ounce) can diced tomatoes
  • 1/4 cup Buffalo Hot Sauce
  • Salt and black pepper, to taste

Béchamel Sauce

  • 1/3 cup salted butter
  • 1/3 cup all-purpose flour
  • 3 1/2 cups milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Lasagna Assembly

  • 1 pound lasagna pasta
  • 3 cups shredded mozzarella cheese
  • 1/2 cup blue cheese crumbles

Instructions

  1. Prepare the Meat Sauce
    Heat the olive oil in a large skillet over medium-high heat. Add the ground chicken, diced onion, and sliced celery. Cook for 7 to 10 minutes until the chicken is fully cooked and the vegetables are soft. Stir in the buffalo hot sauce and canned diced tomatoes. Season with salt and black pepper to taste. Simmer over medium-low heat, allowing the flavors to blend while you prepare the other components.
  2. Make the Béchamel Sauce
    In a medium saucepan, melt the butter over low heat. Whisk in the flour to form a smooth paste. Gradually increase the heat to medium-high and whisk in the milk. Continue whisking constantly as the mixture heats and thickens. Once thickened, remove from heat and season with salt and black pepper to taste.
  3. Prepare the Baking Dish
    Lightly grease a 9×13-inch baking dish. Spread a small amount of the béchamel sauce across the bottom of the dish to prevent sticking. Preheat your oven to 375°F (190°C).
  4. Assemble the Lasagna
  5. Spread 1 cup of the meat sauce on the bottom of the prepared dish.
  6. Lay 4 lasagna noodles on top to form a single layer.
  7. Spread 1/3 of the béchamel sauce over the noodles.
  8. Top with 1/4 of the shredded mozzarella cheese and 1 1/2 cups of the meat sauce.
  9. Repeat these steps two more times to create three full layers.
  10. For the final layer, place a final layer of lasagna noodles, followed by 1 cup of meat sauce and the remaining mozzarella cheese. Sprinkle with blue cheese crumbles.
  11. Bake
    Cover the dish loosely with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 25 minutes, allowing the cheese to brown.
  12. Serve
    Remove from the oven and let stand for several minutes before serving hot.

Notes

  • For a spicier lasagna, increase the buffalo hot wing sauce to 1/2 cup.
  • You can prepare the meat and béchamel sauces in advance to save time during assembly.
  • Allow the lasagna to rest for 10 minutes after baking to help set the layers.
