Instructions

  1. Preheat the Oven: Preheat the oven to 450 degrees F. Prepare a cast iron skillet or ceramic pan with a layer of sliced onion, lemon, and fresh herbs.
  2. Prep the Turkey: Pat the turkey dry and place it in the pan. Rub with butter, season with salt, pepper, garlic, smoked paprika, and thyme. Add stock to the pan.
  3. Roast the Turkey: Roast at 450°F for 20 minutes, then reduce heat to 350°F and continue roasting for 30-40 minutes until internal temperature reaches 165°F. Rest the turkey.
