Cookie
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar
- 1 egg
- 1/2 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
Chocolate Frosting
- 1 tbsp unsalted sweet cream butter
- 3 tbsp cocoa powder
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2–3 tbsp hot water
- 24 mini Cadbury eggs
Instructions
- Preheat the Oven
Begin by preheating your oven to 350°F (175°C). Prepare a cookie sheet by lining it with parchment paper or a silicone baking mat. - Make the Cookie Dough
In a standing mixer, beat together the softened butter and sugar until the mixture becomes light and creamy. Mix in the egg and vanilla extract until fully combined. - In a separate bowl, whisk together the flour, baking powder, and salt. Gradually incorporate the dry ingredients into the wet mixture, mixing until a smooth cookie dough forms.
- Shape the Cookies
Using a small ice cream scoop or tablespoon, scoop out portions of the dough. Roll each portion into a small ball and place them evenly spaced on the prepared cookie sheet. - Bake the Cookies
Bake the cookies in the preheated oven for 8–10 minutes, or until the edges are lightly golden. Remove the cookies from the oven and quickly press your thumb into the center of each, creating a well. Transfer the cookies to a wire rack to cool completely. - Prepare the Frosting
In a small microwave-safe mixing bowl, melt the butter. Stir in the cocoa powder, powdered sugar, vanilla extract, and hot water. Mix thoroughly until the frosting is smooth and creamy. - Assemble the Cookies
Using a spoon, fill the thumbprint wells of each cooled cookie with the chocolate frosting. Top each cookie with a mini Cadbury egg for a festive and delicious treat. - Serve and Enjoy
Your Cadbury Cookies are ready to serve! Store leftovers in an airtight container at room temperature.
Notes
- For best results, use room-temperature butter and eggs to ensure the cookie dough comes together smoothly.
- If you don’t have Cadbury eggs, you can substitute with other mini chocolate-covered candies.
- To make the frosting extra glossy, add a touch more hot water to achieve your desired consistency.
