Tomato Mixture

  • 1 cup grape or cherry tomatoes, cut into 1/4th pieces
  • 1 TBS balsamic vinegar
  • Pinch of salt
  • Pinch of black pepper

Additional Ingredients

  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup basil pesto
  • 2 TBS parmesan cheese

Instructions

  1. Prepare Tomato Mixture: Combine chopped tomatoes with balsamic vinegar, salt, and pepper in a small bowl.
  2. Whisk Eggs: In a separate bowl, whisk eggs until foamy.
  3. Cook Eggs: In a nonstick skillet over medium heat, cook half of the eggs for 1 minute, pushing the cooked edges towards the center.
  4. Add Fillings: Place half of the tomato mixture and mozzarella cheese on one side of the eggs. Cook until almost set, then fold the omelette.
  5. Finish Omelette: Top the omelette with basil pesto, more mozzarella, parmesan cheese, and tomatoes. Serve hot.
  6. Repeat: Follow the same steps for the second omelette.
