- 1 TBS balsamic vinegar
- Pinch of salt
- Pinch of black pepper
Additional Ingredients
- 1/2 cup shredded mozzarella cheese
- 1/4 cup basil pesto
- 2 TBS parmesan cheese
Instructions
- Prepare Tomato Mixture: Combine chopped tomatoes with balsamic vinegar, salt, and pepper in a small bowl.
- Whisk Eggs: In a separate bowl, whisk eggs until foamy.
- Cook Eggs: In a nonstick skillet over medium heat, cook half of the eggs for 1 minute, pushing the cooked edges towards the center.
- Add Fillings: Place half of the tomato mixture and mozzarella cheese on one side of the eggs. Cook until almost set, then fold the omelette.
- Finish Omelette: Top the omelette with basil pesto, more mozzarella, parmesan cheese, and tomatoes. Serve hot.
- Repeat: Follow the same steps for the second omelette.
