Main Ingredients
- 2 tablespoons butter
- 4 cups sliced yellow squash
- 1 medium onion, chopped
- 2 large eggs
- 1 cup grated cheddar cheese
- 1 cup milk
- 2 tablespoons butter (additional)
- ¼ teaspoon cayenne pepper (optional)
- ½ teaspoon kosher salt
- ½ teaspoon ground black pepper
- 1 sleeve Ritz crackers, crushed
Instructions
- Preheat Oven: Preheat your oven to 350º F (175º C) to prepare for baking the casserole.
- Cook Squash and Onions: Melt 2 tablespoons of butter in a medium skillet over medium-low heat. Add sliced yellow squash and chopped onions, sauté until tender, about 8-10 minutes.
- Prepare Casserole Mixture: In a large bowl, whisk eggs until lightly beaten. Add grated cheddar cheese and milk, whisking until well combined. Fold in the cooked squash and onions, stirring thoroughly.
- Add Butter and Seasonings: Melt the remaining 2 tablespoons of butter in the skillet used for the squash. Add this melted butter to the squash mixture along with cayenne pepper (if using), kosher salt, and ground black pepper. Mix well to combine all flavors.
- Assemble Casserole: Spray a 9×13-inch casserole dish with cooking spray. Pour the squash mixture into the dish and spread evenly. Sprinkle the crushed Ritz crackers evenly over the top to form a crust.
- Bake: Place the casserole in the preheated oven and bake for 45 minutes, or until the top is lightly browned and the casserole is set (it should not jiggle when moved).
- Rest and Serve: Allow the casserole to rest for about 3 minutes before serving to let it set and enhance the flavors.

- The buttery cracker topping adds a delightful crunch and richness to the dish.
