Lasagna Noodles

Meat Sauce

- 24 oz marinara sauce
- 1/2 cup diced onion
- 3 garlic cloves (minced)

- 1/2 tsp black pepper (or to taste)
- 1/2 tsp dried oregano

- 15 oz ricotta cheese
- 1 large egg
- 1/4 cup parmesan cheese (shredded)
- 3 cups mozzarella cheese (shredded, divided)
- 1/4 cup parsley (chopped, plus more to garnish)
Instructions
- Cook the noodles: Preheat your oven to 375˚F. Cook the lasagna noodles in a large pot of salted boiling water according to the package instructions until al dente—avoid overcooking. Drain, then immediately fill the pot with cold water to stop the cooking process and prevent the noodles from sticking together.
- Prepare the meat sauce: In a deep pan or Dutch oven over medium-high heat, cook the ground beef until it’s no longer pink, breaking it up with a spatula, about 2 minutes. Add the diced onion and cook for another 3 minutes until softened. Stir in minced garlic, sea salt, black pepper, and oregano, cooking for an additional minute. Pour in the marinara sauce, bring to a simmer, then turn off the heat. Spread 1/2 cup of this meat sauce evenly over the bottom of a casserole dish.
- Make the cheese mixture: In a large bowl, combine ricotta cheese, egg, parmesan cheese, 1 1/2 cups of mozzarella cheese, and chopped parsley. Stir well to create a smooth filling.
- Assemble the roll ups: Lay the cooked noodles flat on a large baking sheet to keep them separated. Spread about 1/4 cup of the cheese mixture evenly over each noodle. Then place a heaping tablespoon of meat sauce in a strip down the center of each noodle. Carefully roll up each noodle, ensuring the filling stays inside, and arrange them seam side down in the casserole dish.
- Top and bake: Spoon the remaining meat sauce over the top of the rolled noodles, then sprinkle the remaining 1 1/2 cups of mozzarella cheese evenly over the sauce. Cover the dish with foil, taking care that the foil does not touch the cheese—if needed, insert toothpicks in the rolls to hold the foil away. Bake in the preheated oven for 40 minutes. Remove the foil and broil for 2-3 minutes until the cheese is bubbling and lightly golden. Garnish with additional chopped parsley before serving.
