This Baked Potato Chicken and Broccoli Casserole is a comforting and hearty dish that combines tender chicken, creamy mashed potatoes, crisp bacon, and broccoli, all baked together with a cheesy topping. It’s a perfect one-dish meal for a cozy family dinner.

Ingredients

Units Scale

For the Mashed Potatoes:

  • 3 pounds red potatoes, cut into 1-inch pieces
  • 4 tablespoons butter, room temperature
  • 1 cup sour cream
  • 1/21 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon granulated garlic or garlic powder
  • 1/2 teaspoon paprika

Additional Ingredients:

  • 1 medium size broccoli crown, about 23 cups bite-size broccoli florets
  • 3 cups cooked chopped chicken
  • 4 slices bacon, cooked and crumbled
  • 2 cups shredded cheese (Monterey Jack, Cheddar, or Mexican blend), divided

Instructions

  1. Preheat the oven: Preheat the oven to 350°F. Grease a 10-inch square baking dish with butter or cooking spray.
  2. Cook the Potatoes: Place the potatoes in a large pot, cover with water, and boil until fork-tender. Drain and return to the pot.
  3. Prepare the Remaining Ingredients: Steam or roast the broccoli until slightly softened. Cook the bacon and crumble it.
  4. Make the Mashed Potatoes: Smash the potatoes and add butter, sour cream, salt, pepper, garlic, and paprika. Mix well.
  5. Assemble the Casserole: Add broccoli, chicken, bacon, and 1 cup of cheese to the mashed potatoes. Transfer to the baking dish and top with remaining cheese.
  6. Bake: Bake for 20-25 minutes until the cheese is melted and the casserole is heated through.
  7. Serve: Enjoy this delicious casserole warm!
