Description

This Cheesy Rice is a simple and comforting side dish that’s ready in under 30 minutes. Fluffy white rice is cooked with onions, spices, and a touch of milk, then finished with a generous amount of sharp cheddar cheese for a creamy and flavorful dish.


Ingredients

  • 1 cup long-grain white rice
  • 3 tablespoons unsalted butter
  • 1/2 small onion, finely diced
  • 8 ounces chicken broth
  • 8 ounces whole milk
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces sharp cheddar cheese, grated

Instructions

  1. Rinse Rice: Rinse rice in a fine-mesh sieve until water runs clear.
  2. Sauté Onion: Melt butter in a saucepan over medium heat. Add onion and cook until softened and lightly browned.
  3. Cook Rice: Add rice, chicken broth, milk, paprika, salt, and pepper to the saucepan. Stir to combine. Bring to a simmer, then cover, reduce heat to low, and cook for 18-20 minutes, or until rice is tender and liquid is absorbed.
  4. Add Cheese: Remove from heat and stir in shredded cheddar cheese until melted and creamy.
  5. Serve: Fluff rice with a fork and serve warm.

Notes

  • Cooking Brown Rice: If using brown rice, increase cooking time to 45 minutes and add more liquid as needed.
  • Liquid/Rice Ratio: Use a 2:1 ratio of liquid to white rice.
  • Storage: Store leftovers in an airtight container in the refrigerator for 3-4 days.
