- 1 cup long-grain white rice
- 3 tablespoons unsalted butter
- 1/2 small onion, finely diced
- 8 ounces chicken broth
- 8 ounces whole milk
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces sharp cheddar cheese, grated
Instructions
- Rinse Rice: Rinse rice in a fine-mesh sieve until water runs clear.
- Sauté Onion: Melt butter in a saucepan over medium heat. Add onion and cook until softened and lightly browned.
- Cook Rice: Add rice, chicken broth, milk, paprika, salt, and pepper to the saucepan. Stir to combine. Bring to a simmer, then cover, reduce heat to low, and cook for 18-20 minutes, or until rice is tender and liquid is absorbed.
- Add Cheese: Remove from heat and stir in shredded cheddar cheese until melted and creamy.
- Serve: Fluff rice with a fork and serve warm.
Notes
- Cooking Brown Rice: If using brown rice, increase cooking time to 45 minutes and add more liquid as needed.
- Liquid/Rice Ratio: Use a 2:1 ratio of liquid to white rice.
