Description

These Chicken Mango Lettuce Wraps are a delightful combination of savory and sweet flavors wrapped in crisp lettuce leaves. Perfect as a light and refreshing meal.

Ground Chicken Mixture:

  • 1 teaspoon cornstarch (or potato or rice starch)
  • 1 teaspoon cooking oil (peanut oil or canola)

Filling:

  • 2 green onions, chopped
  • 4 ounces fresh shiitake mushrooms, sliced
  • 2 teaspoons seasoned rice vinegar
  • 1/2 teaspoon toasted sesame oil
  • 1 large mango, diced (see How to Cut a Mango)

To Serve:

  • 1 head butter lettuce, rinsed, leaves separated

Instructions

  1. Prepare Ground Chicken Mixture: Place the ground chicken, soy sauce, and cornstarch in a large bowl. Mix to combine.
  2. Sauté Shiitake Mushrooms and Green Onions: Heat a wok or a large sauté pan on medium heat. Add oil, green onions, and sliced shiitakes. Cook for about a minute.
  3. Add Chicken Mixture: Increase heat to high and add the ground chicken mixture. Stir fry for 5 to 7 minutes until cooked through.
  4. Add Seasonings and Mango: Mix in rice vinegar, sesame oil, and diced mango. Adjust seasonings to taste.
  5. Assemble Lettuce Wraps: Spoon filling into lettuce leaves. Top with chili sauce, chili pepper flakes, or cilantro leaves if desired.
