Description

These Chili Lime Shrimp Tacos with Mango Salsa are a vibrant and flavorful dish that’s perfect for a quick and easy meal. Tender shrimp seasoned with chili lime seasoning, a refreshing mango salsa, and crumbled cotija cheese all come together in warm tortillas for a delicious taco experience.


Ingredients

  • 1 1/2 cups diced mango
  • 1 shallot, diced
  • 1 jalapeño pepper, diced (remove seeds and ribs for less heat)
  • 1/2 cup chopped cilantro
  • 23 tablespoons fresh lime juice
  • Kosher salt and pepper to taste
  • 1 pound peeled and deveined shrimp, thawed if frozen
  • 23 teaspoons Tajin seasoning (chili lime seasoning)
  • 12 tablespoons olive oil
  • 812 small corn tortillas
  • 1/3 cup crumbled cotija cheese

Instructions

  1. Make Mango Salsa: Combine mango, shallot, jalapeño, cilantro, lime juice, salt, and pepper in a bowl. Toss well and set aside (or refrigerate if making ahead).
  2. Season Shrimp: Pat shrimp dry with paper towels. Season with Tajin seasoning.
  3. Cook Shrimp: Heat olive oil in a skillet over medium heat. Add shrimp in a single layer and cook for 1-2 minutes per side, or until opaque.
  4. Assemble Tacos: Place shrimp in tortillas, top with mango salsa and cotija cheese. Serve immediately.

Notes

  • Adjust the amount of Tajin seasoning to your preferred level of spice.
  • Use your favorite type of tortillas for this recipe.
