Crust:
- 30 standard-sized vanilla wafer cookies
- 2 tablespoons granulated sugar
- 1/4 teaspoon kosher salt
- 3 tablespoons (43g) unsalted butter, melted
- 2 tablespoons (10g) mini chocolate chips
Filling:
- 16 ounces cream cheese, softened
- 3 large eggs
- 1/2 cup (3 1/2 ounces) granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup (2 ounces) sour cream
- 1/2 cup (3 ounces) mini chocolate chips
Instructions
- Preheat oven: Heat oven to 350°F. Grease and line an 8×8 baking dish with parchment paper, leaving an overhang of parchment on two sides.
- Make the crust: Pulse the vanilla wafers in a food processor until fine crumbs the size of sand form. Add sugar, salt, and melted butter. Stir in mini chocolate chips. Press into baking dish and bake.
- Form and bake the crust: Firmly press the crust into the bottom of the dish and bake for 10 minutes. Cool while preparing the filling and reduce oven temperature.
- Make the filling: Beat cream cheese until smooth. Add eggs, sugar, vanilla extract, and sour cream, mixing until just combined. Fold in mini chocolate chips.
- Fill the crust: Spread the cheesecake filling over the prepared crust.
- Bake the bars: Bake at 325°F for 20-25 minutes until just set. Cool in the oven, then chill before serving.
