  • 2 eggs

  • 1/4 teaspoon salt (omit if using salted peanut butter)
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking sheet with parchment paper and set it aside for easy removal of cookies later.
  2. Mix wet ingredients: In a mixing bowl, whisk together the eggs, peanut butter, sugar, and vanilla extract until the mixture is smooth and well combined.
  3. Add dry ingredients: Fold in the vanilla protein powder, baking soda, and salt into the wet mixture. The batter will become thick at this stage.
  4. Incorporate chocolate chips: Gently fold in the chocolate chips to evenly distribute them throughout the dough.
  5. Form the cookies: Using a 2-tablespoon scoop, portion out the dough and roll into balls. Flatten each ball since the cookies will not spread much during baking. Shape them roughly into cookie forms.
  6. Bake: Place the shaped dough balls on the prepared baking sheet and bake in the oven for 8 to 12 minutes, with 10 minutes as an ideal baking time for a chewy texture. They will firm up more as they cool.
