Instructions
- Prepare the Corn Kernels: Carefully cut the kernels off 6 corn cobs to yield about 5 cups. Break them up into individual kernels to ensure even cooking and texture.
- Add Ingredients to Instant Pot: Place the corn kernels, 1 1/2 cups water, and 1 tsp sea salt into the Instant Pot. Stir well to combine all ingredients evenly.
- Pressure Cook: Secure the lid on the Instant Pot, lock it, and set it to cook on high pressure for 4 minutes to soften the corn and blend the flavors.
- Release Pressure: When the cooking cycle is complete, perform a quick release to let out the steam. Carefully remove the lid once pressure is fully released.
- Sauté and Add Flavorings: Switch the Instant Pot to the sauté setting. Stir in 1/2 cup butter, chopped cilantro, lime zest, and 1/4 tsp cayenne pepper. Continue stirring until the butter is fully melted and ingredients are well combined.
- Thicken the Creamed Corn: In a small bowl, mix 1 Tbsp cornstarch with 2 Tbsp water to create a slurry. Pour this slurry into the Instant Pot and stir continuously for about 1 minute until the creamed corn thickens to your desired consistency.
