- 1/2 cup (113.5 g) butter
- 1/2 cup (110 g) brown sugar
- 1/4 cup (50 g) granulated sugar
- 1 large egg, room temp
- 1 egg yolk, room temp
- 2 teaspoon vanilla
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 tablespoon cornstarch
- 1 3/4 cups (245 g) all-purpose flour
Crumb Topping
- 1/2 cup (62.5 g) flour
- 1/3 cup (73.33 g) brown sugar
- 1 1/2 teaspoon cinnamon
- pinch of salt
- 4 tablespoon butter, soft
Glaze
- 1 cup powdered sugar
- good sprinkle of cinnamon
- 1–2 tablespoon milk
Instructions
- Preheat the oven: Preheat the oven to 375°F and line 2 baking sheets with parchment paper.
- Mix butter and sugars: In a stand mixer, beat butter and sugars until light and fluffy.
- Add wet ingredients: Mix in egg, egg yolk, and vanilla until smooth.
- Add dry ingredients: Slowly mix in baking powder, baking soda, salt, cornstarch, and flour until just combined.
- Form cookies: Scoop dough into balls, make an indention, and top with crumb mixture.
- Bake: Bake for 9-12 minutes until edges are golden brown.
- Glaze: Mix powdered sugar, cinnamon, and milk for glaze. Drizzle over cooled cookies.
Notes
- You can sprinkle the cookies with powdered sugar instead of using the glaze.
- For accurate flour measurements, lightly spoon flour into the measuring cup.
