Description

Delicious coffee cake cookies that are perfect for a sweet treat or a morning pick-me-up. These cookies have a buttery base, a crumbly cinnamon topping, and a sweet glaze to finish.

  • 1 egg yolk, room temp
  • 2 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 3/4 cups (245 g) all-purpose flour

Crumb Topping

  • 1/2 cup (62.5 g) flour
  • 1/3 cup (73.33 g) brown sugar
  • 1 1/2 teaspoon cinnamon
  • pinch of salt
  • 4 tablespoon butter, soft

Glaze

  • 1 cup powdered sugar
  • good sprinkle of cinnamon
  • 12 tablespoon milk

Instructions

  1. Preheat the oven: Preheat the oven to 375°F and line 2 baking sheets with parchment paper.
  2. Mix butter and sugars: In a stand mixer, beat butter and sugars until light and fluffy.
  3. Add wet ingredients: Mix in egg, egg yolk, and vanilla until smooth.
  4. Add dry ingredients: Slowly mix in baking powder, baking soda, salt, cornstarch, and flour until just combined.
  5. Form cookies: Scoop dough into balls, make an indention, and top with crumb mixture.
  6. Bake: Bake for 9-12 minutes until edges are golden brown.
  7. Glaze: Mix powdered sugar, cinnamon, and milk for glaze. Drizzle over cooled cookies.

Notes

  • You can sprinkle the cookies with powdered sugar instead of using the glaze.
  • For accurate flour measurements, lightly spoon flour into the measuring cup.
