Description

These Corn Fritters are golden brown, crispy on the outside, and bursting with sweet corn flavor. This easy recipe is perfect for a quick and satisfying breakfast, brunch, or side dish.


Ingredients

  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt (or to taste)
  • 1 teaspoon baking powder
  • 3 cups corn kernels (fresh, frozen, or canned, drained)
  • 2 large eggs, lightly beaten
  • 2/3 cup half and half (10%MF, use more if needed)
  • 1/4 cup vegetable oil (or more as needed, for frying)

Optional

  • 1 tablespoon chopped chives
  • Sour cream, for serving

Instructions

  1. ry Ingredients: Whisk together flour, sugar, salt, and baking powder in a large bowl. Add corn and stir to coat.
  2. Batter: Combine eggs and half and half. Pour into the dry ingredients and stir to form a thick batter. Add more half and half if necessary.
  3. Fry: Heat vegetable oil in a skillet over medium heat. Drop ¼ cup portions of batter into the hot oil. Fry for 2-3 minutes per side, or until golden brown. Adjust heat as needed. Repeat with remaining batter.
  4. Serve: Garnish with chives and sour cream (optional).

  • Batter Consistency: The batter should be thick, but all flour should be incorporated. Add more half and half as needed, especially in dry climates.
