Brownie Crust
- 1 box dark chocolate brownie mix, plus ingredients to make it
Chocolate Cheesecake
- 8 ounces semi-sweet chocolate, roughly chopped
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
Chocolate Ganache
- 8 ounces semi-sweet chocolate chips
- 1/2 cup sweetened condensed milk
- 1/4 cup salted butter
- rainbow chocolate chips, for decoration
Instructions
- For the Brownie Crust – Preheat oven to 350°F. Cut a circle of parchment paper to fit bottom of a 9-inch springform pan and position it inside. Prepare brownie mix per package instructions and pour into the pan. Bake for 12-15 minutes.
- For the Chocolate Cheesecake – Prepare chocolate, mix cream cheese and sugar, add eggs, blend in melted chocolate, pour over crust, bake, cool, chill.
- For the Chocolate Ganache – Heat chocolate chips, condensed milk, and butter until smooth. Pour over cheesecake and top with rainbow chips. Chill until set.
Notes
- For best results, chill the cheesecake overnight before serving.
- You can customize the toppings with your favorite sprinkles or nuts.
