Description

Enjoy the delicious taste of Costco’s iconic Chicken Bake at home with this easy copycat recipe. Fluffy pizza dough is filled with creamy Caesar salad dressing, shredded rotisserie chicken, melty mozzarella, smoky bacon, and topped with parmesan for a golden, cheesy crust. Perfect as a main course for lunch or dinner, these homemade chicken bakes deliver all the savory flavor you crave.

Ingredients

Units Scale

For the Dough:

      • Pizza dough: enough for two 12-inch pizzas (store-bought or homemade)

For the Filling:

      • 1/2 cup Caesar salad dressing
      • 3 cups shredded rotisserie chicken
      • 1 1/2 cups mozzarella cheese, shredded
      • 1/2 cup crumbled bacon

For Assembly and Topping:

    • 2 tablespoons butter
    • 1 cup parmesan cheese, grated

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s hot and ready for baking the chicken bakes.
  2. Prepare the Filling: In a large mixing bowl, combine the Caesar salad dressing, shredded rotisserie chicken, mozzarella cheese, and crumbled bacon. Fold the mixture together until the ingredients are evenly coated and mixed. Set aside.
  3. Roll the Dough: On a lightly floured surface, roll out the pizza dough into two large rectangles, each approximately 6×14 inches.
  4. Fill and Fold: Divide the chicken filling in half and place it in the center of each dough rectangle. Fold the short ends over the filling first, then fold the long sides over to completely enclose the filling, like closing a box. Pinch the seams to seal.
  5. Transfer to Baking Sheet: Gently turn each chicken bake seam side down and place them on a 9×13 inch baking sheet lined with parchment paper to prevent sticking.
  6. Butter and Cheese Topping: Melt the butter and brush it generously over the tops of the chicken bakes. Sprinkle the grated parmesan cheese evenly over each bake for a cheesy, flavorful crust.
  7. Bake: Bake in the preheated oven for 18-20 minutes, or until the chicken bakes are golden brown on top and cooked through.
  8. Serve: Allow the chicken bakes to cool for a couple of minutes, then slice and serve warm. Enjoy your homemade Costco chicken bake!

Notes

  • You can use homemade or store-bought pizza dough based on your preference and time.
  • Leftover roasted chicken or any cooked, shredded chicken can be used instead of rotisserie.
  • For crispier chicken bakes, bake a few extra minutes and monitor closely to prevent burning.
  • Swap Caesar dressing with ranch or your preferred creamy dressing for a flavor twist.
  • Bakes are best enjoyed fresh but can be reheated in the oven for later meals.
