Instructions
- Sauté Onion: In a medium pot, heat olive oil over low heat. Add the chopped onion and cook for about 5 minutes until it begins to soften.
- Cook Broccoli: Add broccoli florets and stock to the pot. Bring to a boil, then cover and simmer for 15 minutes until the broccoli is cooked through.
- Blend Soup: Using a food processor in two batches or an immersion blender directly in the pot, blend the soup until smooth together with blue cheese, ensuring a creamy texture.
- Heat and Add Smoked Gouda: If using a food processor, return the blended soup to the pot and gently heat it until it simmers. Remove from heat and stir in the shredded smoked gouda until melted and well incorporated.
- Season: Add salt and pepper to taste, adjusting according to the saltiness of the cheeses and stock.
- Garnish and Serve: Optionally garnish with single cream and sprinkle with nigella seeds or chosen seeds. Serve the soup immediately while warm.
