Ingredients

Units Scale

For the Shrimp and Sauce:

  • 1 package SeaPak Popcorn Shrimp
  • 2 tablespoons salted butter
  • 1/2 cup Buffalo Sauce (store-bought or homemade)
  • 1/4 cup light ranch dressing

For the Toppings:

  • 1 cup shredded red cabbage
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup shredded green leaf lettuce
  • 1/2 cup diced red onion
  • 1/4 cup crumbled blue cheese
  • 1/2 cup light sour cream

For the Tacos:

  • 8 small corn tortillas, grilled or fried (optional)

Instructions

  1. Preheat the Oven
Preheat your oven to 450°F (232°C). This is essential for baking the shrimp to crispy perfection.
  2. Bake the Popcorn Shrimp
Spread the SeaPak popcorn shrimp in a single layer on a baking sheet. Bake according to the package instructions, ensuring you turn the shrimp once during cooking for even crispness.
  3. Prepare the Buffalo Sauce
While the shrimp is baking, heat a saucepan on medium heat. Add the butter, buffalo sauce, and ranch dressing to the pan, stirring occasionally until the mixture is fully melted and combined into a smooth, tangy sauce. Reduce the heat to low and let it simmer until the shrimp is ready.
  4. Coat the Shrimp in Sauce
Once the shrimp has finished baking, remove them from the oven and immediately toss them into the saucepan with the buffalo sauce. Use a wooden spoon to ensure each piece is fully coated in that flavorful sauce.
  5. Assemble the Tacos
Lay 7 shrimp on each corn tortilla. Top with shredded red cabbage, a sprinkle of cilantro, lettuce, diced red onion, crumbled blue cheese, and a drizzle of light sour cream.
  6. Serve and Enjoy
Serve immediately and enjoy your creamy buffalo shrimp tacos while they’re warm and fresh!

Notes

  • For extra flavor, you can grill or lightly fry the tortillas before assembling the tacos.
  • If you prefer a milder flavor, reduce the amount of buffalo sauce or use a mild version.
  • You can add sliced avocado or a squeeze of lime for additional zest.
  • For a gluten-free option, ensure the tortillas and buffalo sauce are gluten-free.
