Main Ingredients:
- 160g/ 6oz fettuccine or linguine
- 2 tbsp (30g) unsalted butter
- 1/2 tbsp olive oil
- 300g/ 10 oz mushrooms, sliced
- 2 garlic cloves, finely chopped
- 1/2 cup white wine
- 1/2 cup chicken broth/stock
- 3/4 cup cream
- 1/3 cup parmesan, finely grated
- 1/2 tsp salt and pepper
Instructions
- Cook the Pasta: Cook pasta in salted water until slightly underdone. Reserve 1 cup of cooking water before draining.
- Sauté Mushrooms: Melt butter and oil in a skillet. Sauté mushrooms, then add garlic.
- Deglaze with Wine: Add white wine and simmer until reduced.
