  • 160g/ 6oz fettuccine or linguine
  • 2 tbsp (30g) unsalted butter
  • 1/2 tbsp olive oil
  • 300g/ 10 oz mushrooms, sliced
  • 2 garlic cloves, finely chopped
  • 1/2 cup white wine
  • 1/2 cup chicken broth/stock
  • 3/4 cup cream
  • 1/3 cup parmesan, finely grated
  • 1/2 tsp salt and pepper

Instructions

  1. Cook the Pasta: Cook pasta in salted water until slightly underdone. Reserve 1 cup of cooking water before draining.
  2. Sauté Mushrooms: Melt butter and oil in a skillet. Sauté mushrooms, then add garlic.
  3. Deglaze with Wine: Add white wine and simmer until reduced.
  4. Add Sauce Ingredients: Pour in broth, cream, parmesan, salt, and pepper. Simmer to combine.
  5. Combine Pasta and Sauce: Toss drained pasta in the sauce until well coated.
