Hot Honey Sauce

  • 1/3 cup / 110g Honey
  • 1 1/2 tsp Hot Sauce (Frank’s or Cholula recommended)
  • 3/4 tsp Chilli Flakes

Chicken and Coating

  • 2 x 250g/9oz Chicken Breasts, sliced horizontally into 4 pieces
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Black Pepper
  • 1/4 tsp Cayenne Pepper
  • 35g / 1/4 cup Plain Flour
  • 2 Eggs, beaten
  • 65g / 1 cup Panko Breadcrumbs
  • Vegetable Oil, 6-8 tbsp for frying

Topping

  • 200g / 7oz Feta Cheese, crumbled


Instructions

  1. Prepare Hot Honey Sauce: Combine honey, hot sauce, and chilli flakes in a bowl. Warm in the microwave for about 20 seconds or gently simmer on the stove until hot. Stir well and set aside to cool. Adjust heat with more chilli flakes or hot sauce if desired.
  2. Slice Chicken: Horizontally slice each chicken breast through the center to create four even-sized pieces.
  3. Mix Seasonings: In a small bowl or pot, mix together paprika, salt, onion powder, garlic powder, dried oregano, cayenne pepper, and black pepper.
  4. Set Up Breading Stations: Arrange three shallow dishes: first with plain flour mixed with half the seasoning blend, second with beaten eggs, and third with panko breadcrumbs combined with the remaining seasoning.
  5. Coat Chicken: Dredge each chicken piece in the seasoned flour, then dip into the egg, and finally coat thoroughly with the seasoned panko breadcrumbs. Place coated chicken on a tray.
  6. Fry Chicken: Heat vegetable oil to coat the base of a large pan over medium-high heat until hot enough that a breadcrumb sizzles on contact. Fry chicken in batches if needed for 3-4 minutes on each side until deep golden brown, crispy on the outside, and cooked through (white and hot inside). Drain on a wire rack placed over a tray.
  7. Add Feta and Grill: Generously cover each fried chicken piece with crumbled feta. Place under a high grill until the feta begins to turn golden and slightly crisp on top while becoming buttery soft.
  8. Serve: Drizzle your preferred amount of hot honey over the feta-topped chicken. Serve immediately and refrigerate leftover hot honey tightly sealed.
