Description

Crispy Garlic Chicken Thighs feature tender, skinless boneless chicken thighs seared to a golden, crispy perfection, infused with a rich garlic butter sauce and a splash of white wine. This flavorful skillet dish comes together quickly, making it an ideal weeknight dinner that pairs beautifully with a variety of sides such as rice salads or roasted vegetables.

Chicken

  • 700 g / 1.2 lb skinless boneless chicken thighs (5 to 6 pieces)
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1 tbsp olive oil

Sauce

  • 1/2 cup / 125 ml dry white wine (or broth or water)
  • 25 g / 2 tbsp unsalted butter
  • 2 large garlic cloves, minced
  • Finely chopped parsley, optional for garnish

Instructions

  1. Season the chicken: Sprinkle both sides of the chicken thighs evenly with garlic powder, salt, and pepper to enhance the flavor.
  2. Heat the oil: Warm the olive oil in a large skillet over medium heat until hot but not smoking to prepare for searing.
  3. Sear the chicken: Place the chicken in the skillet smooth side down. Press down lightly with a spatula and cook for 5 minutes without moving, allowing a deep golden, crispy crust to form.
  4. Flip and cook: Turn the chicken over and press lightly again. Cook for 2 minutes on this side to develop color and cook through.
  5. Add garlic and butter: Stir in the minced garlic and butter around the chicken. Cook for about 1 minute until the garlic turns light golden and releases a fragrant aroma.
  6. Deglaze the pan: Pour in the white wine (or broth/water), then increase the heat to high. Stir the pan gently to dissolve the golden, caramelized bits stuck to the skillet, infusing flavor into the sauce. Let it simmer rapidly for 1 1/2 minutes or until the alcohol aroma dissipates.
  7. Finish and serve: Remove the pan from heat. Optionally garnish with finely chopped parsley before serving the chicken along with the flavorful sauce spooned over.

Notes

  • You can use chicken breasts instead of thighs, but the golden crust will be less pronounced. Slice breasts horizontally to about 1cm/2/5″ thickness. Use high heat, cook for 2 minutes on one side, flip and cook for 1 minute, then add garlic and butter and proceed as usual.
