Description

This Crock Pot Pecan Pie is a wonderfully easy way to enjoy a classic dessert. With a simple filling and a store-bought crust, this recipe lets your slow cooker do all the work, resulting in a rich and delicious pecan pie.


Ingredients

  • 1 refrigerated pie crust
  • 3 eggs
  • 1 cup sugar
  • 2/3 cup dark corn syrup
  • 1/3 cup melted butter
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chopped pecans (or a combination of chopped and whole pecan halves)
  • Vanilla ice cream for serving

Instructions

  1. Prepare Crock Pot: Spray the inside of a crock pot with cooking spray.
  2. Prepare Crust: Place pie crust in crock pot and mold it to fit the shape of the crock pot.
  3. Mix Filling: Stir remaining ingredients together, except pecans, until mixed well.
  4. Add Pecans: Stir in pecans. Reserve some pecans to arrange on top for decoration, if desired.
  5. Pour Filling: Pour filling into pie crust. If you reserved some pecans, gently place them on top of the filling.
  6. Cook Pie: Cover crock pot and cook on HIGH for 2 ½ to 3 hours.
  7. Cool Pie: Cool completely before trying to remove from crock pot.

Notes

  • Using a crock pot liner can make it easier to lift the pie out of the crock pot.
  • Using a round crock pot is easier than an oval one for this recipe.
  • Check the pie after 2 1/2 hours, as cooking times can vary between slow cookers.
