Bread
- 4 slices thick bread, brioche recommended
Custard Filling
- 1/2 cup (120 ml) Greek yogurt
- 1 large egg
- 2 teaspoons (10 ml) honey, or maple syrup
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
Toppings
- 1/2 cup (68 g) raspberries
- 1/2 cup (57 g) blackberries
- 1/2 cup (22 g) blueberries
- 1/3 cup (50 g) sliced strawberries
- 1 tablespoon (6 g) powdered sugar, for dusting
Instructions
- Preheat the Oven: Set the oven rack to the middle position and preheat to 400ºF (204ºC) to ensure even baking.
- Prepare the Bread: Line a sheet pan with parchment paper. Place the bread slices on the pan and use the back of a spoon to gently indent the center of each slice, creating a small well to hold the custard filling.
- Make the Custard Filling: In a medium bowl, whisk together Greek yogurt, egg, honey (or maple syrup), ground cinnamon, and ground nutmeg until the mixture is smooth and homogenous.
- Fill the Bread: Spoon about 2 tablespoons of the custard mixture into the indented center of each bread slice, adjusting the quantity depending on the size of the bread.
- Add Toppings: Distribute the raspberries, blackberries, blueberries, and sliced strawberries evenly over the custard in each bread slice. Optionally, drizzle extra honey over the berries for added sweetness.
- Bake: Bake in the preheated oven for 12 to 14 minutes until the custard is set but still slightly wobbly on top. The custard’s internal temperature should reach between 170 and 175ºF (76 to 79ºC).
- Serve: Allow the custard toast to cool for 5 minutes on the baking sheet. Before serving, dust with powdered sugar if desired. Enjoy warm for the best flavor and texture.
Notes
- Bread Options: Use any bread that is at least ½-inch thick; brioche about ¾-inch thick is preferred for richness and structure.
- Storing: Store leftover toast in an airtight container for up to 1 day. Reheat in a 325ºF (163ºC) oven or toaster oven until warmed throughout.
- Make it Gluten-Free: Substitute with gluten-free bread to accommodate gluten intolerances.
- Make it Dairy-Free: Use plant-based yogurt alternatives such as almond, rice, coconut, or cashew yogurt instead of Greek yogurt.
