Description

Dilly Cucumber Bites are a refreshing and flavorful appetizer perfect for any gathering. These bite-sized treats feature crisp cucumber slices topped with a creamy and herby mixture, finished with a burst of juicy grape tomato. They are not only easy to make but also a delightful way to enjoy a light and healthy snack.

Ingredients

Units Scale

Cucumber Bites:

  • 4 large English cucumbers

Creamy Topping:

  • 1 pint grape tomatoes
  • 1 (8 oz) block cream cheese, at room temperature
  • 1 small (5.3 oz) container plain Greek yogurt
  • 3 tbsp fresh dill, minced
  • 1 tbsp powdered Ranch dressing mix (such as Hidden Valley)

Instructions

  1. Slice the Vegetables: Slice cucumbers into rounds, about ½-inch thick. Slice grape tomatoes in half (or quarters, if large) and set aside.
  2. Prepare the Creamy Mixture: In a bowl, combine cream cheese, Greek yogurt, dill, and Ranch dressing powder. Mix thoroughly using an electric mixer or by hand.
  3. Assemble the Bites: Transfer the cheese mixture to a piping bag or a Ziplock bag with a corner snipped off. Pipe the cheese mixture onto the cucumber rounds and top each with a cherry tomato half.

Notes

  • You can customize these bites by adding a sprinkle of black pepper or a drizzle of balsamic glaze for extra flavor.
  • These bites are best served fresh but can be refrigerated for a few hours before serving.
