Description

A delightful and festive treat perfect for Easter celebrations! These cookie bars are soft, buttery, and loaded with Easter candies like M&M’s, Hershey’s chocolate bunnies, and Mini Robin Eggs. They are super easy to make and a fun way to bring cheer to any holiday gathering.

Dry Ingredients

  • 2 1/4 cup all-purpose flour
  • 2 teaspoons baking soda

Wet Ingredients

  • 3/4 cup butter (softened to room temperature)
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract

Toppings

  • 2/3 cup Easter M&M’s
  • Hershey’s chocolate Easter bunnies
  • Mini Robin Eggs
  • Pastel sprinkles

Instructions

  1. Prepare the Oven and Pan
    Preheat your oven to 350℉. Line a 13×9-inch baking pan with aluminum foil or parchment paper for easy removal and cleanup.
  2. Mix the Dry Ingredients
    In a mixing bowl, stir together the flour and baking soda. Set this aside for later use.
  3. Cream the Butter and Sugars
    In a separate mixing bowl, add the softened butter, brown sugar, and granulated sugar. Use either a stand mixer or handheld mixer to cream them together on medium speed until smooth and fluffy.
  4. Combine the Wet Ingredients
    Add the eggs and vanilla extract to the creamed sugar mixture. Mix on low until all ingredients are fully incorporated. Ensure you scrape down the sides of the bowl to mix evenly.
  5. Add the Dry Ingredients
    Gradually add the flour mixture in two parts. Mix on low speed for each addition until the flour is fully combined.
  6. Incorporate the M&M’s
    Gently fold in ½ cup of the M&M candies using a spoon or spatula to ensure an even distribution throughout the dough.
  7. Spread the Dough
    Transfer the dough to your prepared baking pan. Spread the dough evenly in the pan—it will be sticky, so lightly spraying your hands with nonstick spray can be helpful.
  8. Add Toppings
    Sprinkle the remaining M&M’s and pastel sprinkles over the dough.
  9. Bake the Cookie Bars
    Place the pan in the oven and bake for 18–20 minutes or until the edges are lightly golden.
  10. Add Chocolate and Mini Robin Eggs
    Immediately after removing the pan from the oven, gently place the Hershey’s chocolate bunnies and Mini Robin Eggs on top of the hot cookie bars. Lightly press them into the dough. Allow the bars to cool completely in the pan before slicing and serving.
