Main Ingredients
- 3 (85g) bags ramen noodles, such as Mr Noodles
- 1 head broccoli, chopped
- 2 tablespoons tamari or low sodium soy sauce
- 2 tablespoons hoisin sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 chicken breasts, cut into 1-inch pieces
- 4 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- Cook Noodles and Broccoli: Bring a large pot of water to a boil on the stove. Add the ramen noodle packs to the boiling water, discarding the seasoning packs. Cook the noodles for 2 minutes, adding the chopped broccoli during the last minute of cooking. Drain the noodles and broccoli, then set aside.
- Prepare Sauce: In a small bowl, combine the tamari (or soy sauce), hoisin sauce, and minced garlic. Mix well and set aside.
- Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, seasoning them with salt and pepper to taste. Cook the chicken for 6-7 minutes until browned and fully cooked through.
- Toss Everything Together: Add the cooked ramen noodles, broccoli, and sauce mixture to the skillet with the chicken. Gently toss everything together and cook for an additional 1-2 minutes until the sauce thickens and coats all ingredients evenly.
- Garnish and Serve: Remove the skillet from heat. Garnish the stir fry with sliced green onions and sesame seeds. Serve immediately and enjoy your flavorful meal!
Notes
- Swap out the chicken for shrimp, beef, or tofu for different protein variations.
- Add extra vegetables like bell peppers, bok choy, or mushrooms for additional nutrition and flavor.
- Store leftovers in the refrigerator for up to 5 days. When reheating, sprinkle a little water over the top and microwave for 2-3 minutes to retain moisture.
