Description

This Easy Chicken Ramen Noodle Stir Fry is a quick and flavorful weeknight meal ready in just 30 minutes. Tender chicken breast pieces are stir-fried with broccoli and cooked ramen noodles, all tossed in a deliciously savory sauce made with tamari, hoisin, and garlic. Garnished with green onions and sesame seeds, it’s a satisfying and colorful dish perfect for a busy day.

Ingredients

Scale

Main Ingredients

  • 3 (85g) bags ramen noodles, such as Mr Noodles
  • 1 head broccoli, chopped
  • 2 tablespoons tamari or low sodium soy sauce
  • 2 tablespoons hoisin sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 chicken breasts, cut into 1-inch pieces
  • 4 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Cook Noodles and Broccoli: Bring a large pot of water to a boil on the stove. Add the ramen noodle packs to the boiling water, discarding the seasoning packs. Cook the noodles for 2 minutes, adding the chopped broccoli during the last minute of cooking. Drain the noodles and broccoli, then set aside.
  2. Prepare Sauce: In a small bowl, combine the tamari (or soy sauce), hoisin sauce, and minced garlic. Mix well and set aside.
  3. Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, seasoning them with salt and pepper to taste. Cook the chicken for 6-7 minutes until browned and fully cooked through.
  4. Toss Everything Together: Add the cooked ramen noodles, broccoli, and sauce mixture to the skillet with the chicken. Gently toss everything together and cook for an additional 1-2 minutes until the sauce thickens and coats all ingredients evenly.
  5. Garnish and Serve: Remove the skillet from heat. Garnish the stir fry with sliced green onions and sesame seeds. Serve immediately and enjoy your flavorful meal!

Notes

  • Swap out the chicken for shrimp, beef, or tofu for different protein variations.
  • Add extra vegetables like bell peppers, bok choy, or mushrooms for additional nutrition and flavor.
  • Store leftovers in the refrigerator for up to 5 days. When reheating, sprinkle a little water over the top and microwave for 2-3 minutes to retain moisture.
