- 2 cups all-purpose flour
- 3 tablespoons granulated sugar
- 3 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2 large eggs
- 1 1/2 cups eggnog
- 6 tablespoons unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla bean paste (or vanilla extract)
Instructions
- Preheat and Prep: Preheat waffle iron and spray with non-stick cooking spray.
- Combine Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- Combine Wet Ingredients: In a separate bowl, whisk together eggs, eggnog, melted butter, and vanilla.
- Combine Batter: Pour wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
- Cook Waffles: Pour ¼ cup of batter onto the preheated waffle iron and cook until golden brown and crispy. Repeat with remaining batter.
Notes
- Leftover waffles can be stored in the refrigerator for up to 4 days.
- To reheat, place waffles in a 300°F oven until warmed through.
- To freeze, store leftover waffles in a freezer-safe container or bag for up to 3 months. Thaw in the refrigerator before reheating.
