Description

This Easy Lemon Chicken recipe is a quick and flavorful dish that is perfect for a weeknight dinner. Tender chicken cutlets are cooked to golden perfection and served with a tangy lemon butter sauce.

Ingredients:

  • 2 large boneless skinless chicken breasts
  • Salt & pepper to taste
  • 1/4 teaspoon garlic powder
  • Flour for dredging
  • 1 tablespoon olive oil
  • 3 tablespoons butter, divided
  • 1/2 cup chicken broth
  • 2 tablespoons lemon juice + zest of 1/2 lemon
  • Chopped fresh parsley, optional, to taste

Instructions

  1. Cut Chicken: Cut chicken breasts in half lengthwise to create thinner cutlets. Season with salt, pepper, and garlic powder. Dredge in flour.
  2. Cook Chicken: Heat olive oil and 1 tablespoon of butter in a skillet. Cook chicken cutlets for 4-5 minutes per side until golden. Remove from pan.
  3. Prepare Sauce: Add chicken broth, lemon juice + zest, and remaining butter to the pan. Let it simmer for a few minutes.
  4. Finish Dish: Return chicken to the pan and cook until done. Adjust seasoning and sprinkle with fresh parsley.

Notes

  • If using small chicken breasts, cutting them in half may not be necessary.
