Ingredients:
- 2 large boneless skinless chicken breasts
- Salt & pepper to taste
- 1/4 teaspoon garlic powder
- Flour for dredging
- 1 tablespoon olive oil
- 3 tablespoons butter, divided
- 1/2 cup chicken broth
- 2 tablespoons lemon juice + zest of 1/2 lemon
- Chopped fresh parsley, optional, to taste
Instructions
- Cut Chicken: Cut chicken breasts in half lengthwise to create thinner cutlets. Season with salt, pepper, and garlic powder. Dredge in flour.
- Cook Chicken: Heat olive oil and 1 tablespoon of butter in a skillet. Cook chicken cutlets for 4-5 minutes per side until golden. Remove from pan.
- Prepare Sauce: Add chicken broth, lemon juice + zest, and remaining butter to the pan. Let it simmer for a few minutes.
- Finish Dish: Return chicken to the pan and cook until done. Adjust seasoning and sprinkle with fresh parsley.
Notes
- If using small chicken breasts, cutting them in half may not be necessary.
