Description

These Fajita Burgers blend classic juicy beef patties with the bold, smoky flavor of chipotle-spiced peppers and onions, topped with melty white cheddar and optional fresh toppings for a satisfying meal. They’re packed with flavor, easy to make, and the spice level is customizable for every palate.

  • 8 ground beef burger patties (91% lean, 190 calories each)
  • 8 burger buns (200 calories each)
  • 8 slices white cheddar cheese
  • Fajita Peppers and Onions

  • 1 red bell pepper, chopped (150g)
  • 1 green bell pepper, chopped (150g)
  • 1/2 large yellow onion, sliced
  • Chipotle Sauce

  • 1 (7 oz) can chipotle peppers in adobo sauce (use 1/2 to 1/4 can for less spice)
  • 1/4 cup water
  • Optional Toppings

  • Lettuce
  • Avocado

Instructions

  1. Prepare the Vegetables:
    Slice the red and green bell peppers and the yellow onion into thin strips. Set aside.
  2. Cook the Peppers and Onions:
    Heat a sauté pan over medium-low heat and spray with cooking spray. Add the sliced onions and bell peppers, cooking until they are softened, about 10 minutes.
  3. Prepare Chipotle Sauce:
    While the vegetables cook, open the chipotle peppers in adobo. Chop the large peppers into small pieces. Add both the chopped chipotle peppers and all of the adobo sauce to the softened vegetables in the pan. Stir well.
  4. Simmer the Mixture:
    Add 1/4 cup water to the pepper and onion-chipotle mixture and reduce to a simmer. Let the mixture cook together while you prepare the burgers, allowing the flavors to meld. Adjust the amount of chipotle for your desired spice level (note: 1 full can is very spicy).
  5. Cook the Burger Patties:
    Cook the ground beef patties according to your preferred method or according to package instructions if using frozen. Cook until they reach your desired doneness (160°F for well-done).
  6. Add Cheese:
    Top each burger patty with a slice of white cheddar cheese and allow it to melt.
  7. Assemble the Burgers:
    Layer each burger bun with optional lettuce, a cheesy burger patty, about 75g of the pepper and onion mixture, optional avocado slices, and top with the other half of the bun.
  8. Serve:
