Description

Frozen S’mores are a delightful no-bake dessert layering creamy chocolate pudding, marshmallow cream cheese mixture, and crunchy graham crackers, frozen to set into a perfect treat that tastes like traditional s’mores but with a cool twist.

Chocolate Pudding Layer

  • 1 (5.9-ounce) box instant chocolate pudding
  • 2 1/2 cups whole milk
  • 1/2 cup Cool Whip, defrosted
  • 6 graham crackers, broken in half

Cream Cheese Marshmallow Layer

  • 5 ounces cream cheese, at room temperature
  • 7 ounces marshmallow creme
  • 2 cups Cool Whip, defrosted
  • Pinch of salt
  • 6 graham crackers, broken in half

Instructions

  1. Prepare baking dish: Line a 9×13-inch baking dish with parchment paper, leaving extra parchment hanging over the sides to make removing the dessert easier later.
  2. Make pudding layer: In a medium bowl, whisk together the instant chocolate pudding mix, whole milk, and ½ cup of Cool Whip until the mixture is smooth and creamy.
  3. Assemble first layer: Lay half of the broken graham crackers evenly across the bottom of the prepared baking dish. Spread the pudding mixture in an even layer over the graham crackers. Place in the refrigerator to chill.
  4. Prepare marshmallow cream cheese layer: In another medium bowl, beat the cream cheese and marshmallow creme together until smooth and fully combined. Gently fold in the remaining 2 cups of Cool Whip along with a pinch of salt until the mixture is light and fluffy.
  5. Assemble cream cheese layer and top: Spread the cream cheese mixture evenly over the chilled chocolate pudding layer. Then place the remaining graham crackers evenly on top.
  6. Freeze: Cover the baking dish tightly with foil and freeze for at least 6 hours or until firm enough to cut into squares.
  7. Cut and serve: Use the parchment overhang to lift the frozen layers out of the dish. Place on a cutting board and cut into 12 squares using the graham crackers as guides. Trim any excess frozen filling if necessary. Allow to soften slightly at room temperature for about 15 minutes before enjoying, or store in a freezer-safe bag for later.

Notes

  • Easy Protein Frozen S’mores: For a protein-packed twist, melt ½ cup semi-sweet chocolate chips with 1 teaspoon coconut oil and spread over 5 graham crackers in a 9×9-inch pan. Freeze 5 minutes until set. Mix 1 scoop vanilla protein powder into Cool Whip (or coconut whip) and spread on top. Add more grahams, then freeze overnight.
  • Storage: Wrap each s’more individually in plastic wrap and store in a freezer container for up to 2 months. Thaw at room temperature for 15 minutes before serving.
