Description

These Garlic Butter Brussels Sprouts are perfectly roasted to a crisp and then tossed in a luscious, flavorful garlic honey butter sauce, finished with a sprinkle of parmesan cheese. A delicious side dish that transforms Brussels sprouts into a must-have, even for those who don’t usually enjoy them.

Ingredients

Scale

Brussels Sprouts

  • 1 ½ – 1 ¾ pounds Brussels sprouts, trimmed and cut in half
  • 2 tablespoons olive oil, divided
  • Salt and pepper, to taste

Garlic Honey Butter

  • 3 tablespoons butter
  • 4-6 fresh garlic cloves, minced
  • 3-4 teaspoons honey
  • ⅛ teaspoon cayenne pepper (or more to taste)

Topping

  • 3 tablespoons grated parmesan cheese

Instructions

  1. Prep: Position a rack in the center of the oven and preheat it to 450ºF (232ºC). Line a baking sheet with parchment paper or foil sprayed with cooking spray. In a bowl, toss the halved Brussels sprouts with 1 tablespoon of olive oil, ½ teaspoon of salt, and a generous pinch of black pepper to coat evenly.
  2. Roast the Brussels Sprouts: Spread the Brussels sprouts in a single layer on the prepared baking sheet. Roast for 18-20 minutes, tossing halfway through, until the sprouts are crisp and golden brown on the edges.
  3. Prepare Garlic Honey Butter: About 5 minutes before the Brussels sprouts finish roasting, combine the butter, minced garlic, honey, and cayenne pepper in a microwave-safe bowl. Microwave for 30 seconds to 1 minute until the butter melts completely, then stir to combine the flavors.
  4. Toss Sprouts in Garlic Honey Butter: Once the Brussels sprouts are roasted, transfer them to a large bowl and pour the warm garlic honey butter sauce over them. Toss well to evenly coat all the sprouts.
  5. Add Parmesan and Finish Roasting: Sprinkle the grated parmesan cheese over the coated Brussels sprouts, then spread them back onto the baking sheet. Return to the oven for another 5 minutes, allowing the cheese to melt and meld with the flavors.
  6. Serve: Remove from the oven and serve the garlic butter Brussels sprouts warm as a flavorful side dish.

Notes

  • These Brussels sprouts are incredibly flavorful and crispy, perfect for converting even those who dislike vegetables.
  • Tossing the sprouts in garlic honey butter immediately after roasting adds a rich, sweet, and spicy touch.
  • Adjust cayenne pepper to your desired level of heat for a milder or spicier dish.
  • For an extra crisp texture, make sure your Brussels sprouts are thoroughly dried before tossing with oil.
  • Leftovers can be reheated in the oven to maintain crispness but are best enjoyed fresh.
