Pasta

  • 8 ounces spaghetti

Shrimp and Sauce

  • 4 tablespoons butter, divided
  • 1 pound large shrimp, peeled and deveined
  • 1/4 teaspoon salt
  • 1/2 teaspoon crushed red pepper
  • 4 garlic cloves, minced
  • 2 tablespoons lemon juice
  • 3 tablespoons freshly grated parmesan cheese
  • 2-3 tablespoons chopped parsley

Instructions

  1. Cook the pasta: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Drain well and reserve 1 cup of the pasta cooking water for the sauce.
  2. Cook the shrimp: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the shrimp, salt, and crushed red pepper. Cook, stirring occasionally, until the shrimp turn opaque pink and are cooked through, about 2-3 minutes. Remove the shrimp from the skillet and set aside.
  3. Make the sauce: In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Cook over medium heat until fragrant, about one minute. Turn off the heat and add the lemon juice, reserved pasta water, and parmesan cheese. Stir well to combine into a smooth sauce.
  4. Toss pasta with sauce: Transfer the drained spaghetti into the skillet with the sauce. Toss thoroughly to coat the pasta evenly with the buttery garlic lemon sauce.
  5. Serve: Place the cooked shrimp on top of the pasta. Garnish with chopped parsley and serve immediately for best flavor and texture.
