Description

This German Potato Salad is a hearty and flavorful dish with tender potatoes, crispy bacon, and a tangy vinegar dressing. A classic comfort food perfect for any occasion.


Ingredients

  • 2 pounds red potatoes
  • 10 ounces bacon slices, cut into 1/2-inch pieces
  • 1 medium red onion, finely diced
  • 1/3 cup apple cider vinegar
  • 1 tablespoon granulated sugar
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon pepper, or to taste
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup chives, chopped

Instructions

  1. Boil Potatoes: Add potatoes to a large pot of salted water, bring to a boil, and cook until fork-tender.
  2. Cook Bacon: While potatoes boil, cook bacon in a skillet until crisp. Remove bacon and leave grease in the skillet.
  3. Sauté Onions: Add onion to the bacon grease and cook until softened. Stir in vinegar, sugar, mustard, salt, and pepper. Let the mixture reduce slightly.
  4. Finish the Salad: Dice potatoes and place them in a large bowl. Pour the onion dressing over the potatoes. Add bacon, olive oil, parsley, and chives. Stir gently to combine.

Notes

  • Wash and scrub the potatoes thoroughly, as the skin is left on.
  • Be gentle when tossing the salad to avoid mashing the potatoes.
