Description

This Giant Breakfast Wrap is the ultimate hearty breakfast recipe, combining crispy hash browns, bacon, sausage, scrambled eggs, and melty cheddar cheese, all wrapped in soft tortillas and oven-baked until golden. Easy to make in a 9×13-inch dish, it’s a crowd-pleasing breakfast for family gatherings or weekend brunches.

Main Ingredients

  • 7 large flour tortillas
  • 6 crispy hash brown patties, prepared
  • 6 slices thick-cut bacon, cooked
  • 8 ounces ground pork sausage, cooked
  • 6 large eggs, scrambled
  • 2 cups (226 g) sharp cheddar cheese, shredded

For Garnish

  • Green onions, chopped
  • Tomatoes, diced

Instructions

  1. Preheat Oven – Preheat your oven to 400°F (204°C). Spray a 9×13-inch baking dish with nonstick cooking spray to prevent sticking.
  2. Layer Tortillas – Place one tortilla in each corner and one on each end of the baking dish (6 tortillas total), overlapping slightly to ensure there are no spaces or gaps.
  3. Add Hash Browns and Bacon – Position a prepared hash brown patty on top of each tortilla, then place a slice of cooked bacon over each hash brown.
  4. Add Sausage, Eggs, and Cheese – Evenly sprinkle the cooked ground pork sausage and scrambled eggs over the bacon. Next, top the mixture with shredded cheddar cheese, distributing it evenly.
  5. Top and Fold – Place the seventh tortilla over the filling in the center of the dish. Carefully fold over the sides of the tortillas, working one at a time, to completely enclose the filling and form a wrap.
  6. Bake – Bake uncovered in the preheated oven for 20–25 minutes, or until the tortillas are golden and crispy and the cheese is melted.
  7. Garnish and Serve – Remove from the oven, and garnish with chopped green onions and diced tomatoes. Serve the breakfast wrap warm, sliced into portions.

Notes

  • You can substitute turkey or chicken sausage for pork sausage if desired.
  • Use pre-shredded cheese to save prep time.
  • Add your favorite salsa or hot sauce for extra flavor when serving.
  • This recipe is best served fresh, but leftovers can be reheated in the oven.
