Ingredients:
- 1 pound lean ground pork (or ground turkey, or beef)
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons fresh ginger (or 1 1/2 teaspoons ground ginger)
- 2 cans gluten free chicken broth (14.5 ounces each)
- 8 ounces cole slaw mix
- 2 tablespoons gluten free soy sauce
- 2 tablespoons gluten free rice vinegar or rice wine vinegar
- Optional: noodles, rice, etc. (see note below)
Instructions
- Cook Meat and Onions: In a large pan, cook the ground pork and onion until the meat is browned and the onion is tender. Drain off any excess fat.
- Add Aromatics: Stir in the garlic and ginger, cooking for about 1 minute.
- Combine Ingredients: Add the cole slaw mix and cook for 2-3 minutes over medium heat.
- Add Broth and Seasonings: Pour in the chicken broth, soy sauce, and rice vinegar. Stir to combine.
- Simmer: Reduce heat to low and simmer the soup for 15-20 minutes.
- Serve: If desired, offer extra soy sauce, hot sauce, etc. for individual seasoning preferences.
Notes
- Gluten free rice noodles, brown rice ramen noodles, or rice can be added to increase serving size and variety.
