Ingredients

Eggs:

  • 1215 eggs

Scrambled Eggs:

  • 2 tbsp butter
  • 2 tbsp cream

Hash Browns:

  • 4 tbsp canola oil
  • 1 large green pepper, seeded & diced
  • 1 small yellow onion, peeled & diced
  • 1 pkg refrigerated diced hash brown potatoes

Additional Fillings:

  • 1 cup chopped ham
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Prepare Scrambled Eggs: Melt butter in a skillet over medium heat. Whisk eggs and cream, cook until slightly underdone, then set aside.
  2. Cook Hash Browns: Heat canola oil in the same skillet, add hash browns, cook until crispy. Add veggies and ham, cook until tender.
  3. Assemble Bowls: Layer scrambled eggs, cheese, hash brown mixture in bowls. Refrigerate and use within 5 days.

Notes

  • Use a cast iron skillet for best results.
