Eggs:
- 12–15 eggs
Scrambled Eggs:
- 2 tbsp butter
- 2 tbsp cream
Hash Browns:
- 4 tbsp canola oil
- 1 large green pepper, seeded & diced
- 1 small yellow onion, peeled & diced
- 1 pkg refrigerated diced hash brown potatoes
Additional Fillings:
- 1 cup chopped ham
- 1 1/2 cups shredded cheddar cheese
Instructions
- Prepare Scrambled Eggs: Melt butter in a skillet over medium heat. Whisk eggs and cream, cook until slightly underdone, then set aside.
- Cook Hash Browns: Heat canola oil in the same skillet, add hash browns, cook until crispy. Add veggies and ham, cook until tender.
- Assemble Bowls: Layer scrambled eggs, cheese, hash brown mixture in bowls. Refrigerate and use within 5 days.
Notes
- Use a cast iron skillet for best results.
- Recipe can be adjusted to make 4-6 bowls or more.
- Variations: use bacon or sausage, different cheese.
