Wet Ingredients:
- 1.5 cups nonfat plain Greek yogurt
- 2 eggs
- 1 cup milk
- 2 tsp vanilla extract
Dry Ingredients:
- 2 cups all-purpose flour
- 2 tbsp granulated sugar
- 1 tbsp baking powder
- 1/2 tsp kosher salt
Instructions
- Prepare Wet and Dry Ingredients: Whisk Greek yogurt, eggs, milk, and vanilla extract together in a bowl. In a separate bowl, combine flour, sugar, baking powder, and salt.
- Mix Batter: Fold the dry ingredients into the wet ingredients with a flat spatula until just combined. Be careful not to overmix the batter.
- Cook Waffles: Heat a waffle iron. Once warm, spray with oil. Pour the batter into the center of the iron and cook for about 2 minutes until the waffles are golden brown on the outside and cooked through.
- Repeat: Repeat the cooking process until all the batter is used. Remember to spray the waffle iron with oil between each waffle to prevent sticking.
- Storage: Store waffles in the fridge for up to 5 days or in the freezer for up to 3 months. Reheat in a toaster or toaster oven until warmed through. Waffles can be toasted directly from frozen.
